ESFERAÏM, a new research project that prioritizes respect for spontaneous fermentation processes with controlled vinification
The Mas d’en Blei winery team has set up a research project that aims to define and reproduce the characteristics of a terroir wine from the vineyard to the bottle.
This work aims to identify yeast strains endemic to each plot, characterize them and reproduce those of oenological interest in order to produce superior quality wines fully linked to the territory of origin.
The evolution of the product and the organoleptic profile will allow to define which yeasts of oenological interest to select, and once they are clearly identified, will allow to obtain reproducible models that will be applied to the future elaborations of the winery.
